Optional: To make bacon bits, air fry bacon strips at 400 degrees Fahrenheit for about 5 minutes. Flip, then cook another 3 minutes. Chop once cooled.
Rub the washed potatoes with oil and salt. Air fry them for 40-45 minutes at 400 degrees Fahrenheit - test their doneness with a fork or knife.
Let the potatoes cool, cut them in half, and then scoop out some of the flesh. Leave the skin intact so they keep their shape.
In a bowl, add the potato flesh, cheddar cheese, bacon bits, sour cream, black pepper, and salt. Mix well.
Spoon the mixture into the potato skins. Then place them in the air fryer and cook at 400°F for 7 minutes until melted and crispy.
When done, remove the twice baked potatoes from the air fryer, let them cool a little bit, and garnish with chopped chives or green onions! Enjoy!
