If you’re a fan of easy dinners, try this air fryer sausage and spring vegetable combo dish. It’s simple and perfect for nights when you just want to slice, spice, and dump ingredients into the air fryer.

We love it because the vegetables get this tender-yet-crispy texture, and the sausage lends its juices to the whole dish. It’s hearty without hassle.

  • Sausages – We use mild Italian sausages, but you can also try hot Italian sausages.
  • Green asparagus – Use firm asparagus with stalks of similar thickness.
  • Sugar snap peas – For the best taste, choose vibrant green and firm pods.
  • Red onion – Adds some extra flavor. You can also use a yellow onion.
  • Oil – We use olive oil for this recipe, but you can also use avocado oil, canola oil, or similar.
  • Garlic powder – Adds extra flavor.
  • Dried oregano – Works really well with the rest of the flavors in this dish, but you can skip it if you don’t have any on hand.
  • Salt – Enhances the overall flavor; adjust to taste.
  • Black pepper – For more flavor; adjust to taste.
  • Chili flakes – Optional for a hint of spice.
  • Lemon juice – Optional for serving. Tastes great with the asparagus and balances the grease from the sausages.

Step-by-Step Instructions

First, slice the Italian sausages into 1/2 pieces and add them to a bowl.

Rinse and dry the asparagus, trim off the woody ends, and cut it into bite-sized pieces. Add it to the bowl.

Rinse the snap peas if needed and add them as well. Peel and slice the onion, then add it to the bowl along with the oil, garlic powder, oregano, salt, black pepper, and chili flakes (if using). Toss to coat.

Preheat the air fryer to 360 degrees Fahrenheit (180 degrees Celsius). Then add the sausage and vegetable mix and give the basket a shake to settle everything in an even layer.

Air fry for 11-14 minutes, shaking the basket every 3-4 minutes, or until the sausage is cooked through and the vegetables are crisp yet tender.

Storage Tips

If you have leftovers, store them in a sealed container in the fridge for up to 3 days. In fact, the flavors actually get better the next day

You can reheat it in the microwave for ease, but the air fryer also works really well. Choose a lower temperature, like 300 degrees Fahrenheit, for just a few minutes until heated.

Ingredients

  • 14 ounces Italian sausage, approximately (we used 4 sausages)
  • ½ bunch green asparagus, about 6 ounces (170 grams)
  • 1 cup sugar snap peas
  • ½ medium red onion, optional
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt, more to taste
  • ¼ teaspoon black pepper
  • pinch of chili flakes, optional
  • freshly squeezed lemon juice, for serving (optional)

Instructions

  • Slice the sausages into 1/2-inch pieces and add them to a mixing bowl.
