Sometimes the best quick meals come from the simplest ingredients. Enter: Air fryer cherry tomato gnocchi!

This is one of our go-to easy weeknight dinners when we don’t feel like cooking, but want something warm and flavorful. We both love gnocchi, and usually have all the ingredients on hand, so it’s an easy choice.

Cooked all together in the air fryer, the cherry tomatoes soften and burst, the gnocchi get a slight crisp, and the Parmesan brings everything together. And if you’re looking for a simple gnocchi dinner with sausage, you can find one in our Easy Air Fryer Recipes eBook.

This recipe is essentially a combination of two of our other recipes: air fryer gnocchi and air fryer cherry tomatoes, but the result is even more delicious and totally worth trying.

Ingredients

  • Gnocchi – We’re using shelf-stable gnocchi for this recipe.
  • Cherry tomatoes – Use firm cherry tomatoes with a vibrant red color for the best taste.
  • Oil – We use avocado oil, but you can also use olive oil, canola oil, or vegetable oil.
  • Italian seasoning – Using a seasoning mix is easy, but you can also use some of your favorite dried herbs, such as rosemary, thyme, or oregano.
  • Salt – Enhances the overall flavor; adjust to taste.
  • Garlic powder – Adds extra flavor. You can also add some diced fresh garlic if you prefer.
  • Black pepper – Use freshly cracked pepper for the best taste if you have any.
  • Parmesan cheese – We like to use Parmigiano Reggiano, but Grana Padano is also a great option.

Recipe Tips

  • Don’t mix the tomatoes and gnocchi too aggressively; try to be gentle.
  • The gnocchi will get slightly crispy edges, but won’t crisp completely (this somewhat depends on the size of your air fryer). If you want very crispy gnocchi, cook them without the tomatoes.
  • Adjust the seasonings to your taste. You can add more Italian seasoning and garlic, or some chili flakes for a bit of heat.
  • Serve the gnocchi and tomatoes right away for the best taste.

Step-by-Step Instructions

Add all the ingredients, minus the shredded Parmesan cheese, to a mixing bowl. Toss to coat.

Preheat the air fryer to 375 degrees Fahrenheit (190 degrees Celsius). When it’s hot, add the gnocchi and tomatoes. Shake the basket to settle them in an even layer.

Air fry for 9-11 minutes, or until the gnocchi are soft and lightly crispy. Shake the air fryer basket every 3 minutes or so to help with even cooking.

Then sprinkle with finely shredded Parmesan cheese and cook for another 2 minutes until melted.

Serve the gnocchi warm, with fresh chopped parsley (optional). But be careful, the tomatoes will be hot. Enjoy!

Storage Tips

You can store leftover cherry tomato gnocchi in a sealed container in the fridge for up to 3 days. Keep in mind that they will soften over time due to the moisture.

You can reheat the gnocchi in the air fryer at a low temperature, such as 325 degrees Fahrenheit, for a few minutes, or in the microwave if you don’t mind them being soft.

Ingredients

  • 1 pound gnocchi, shelf-stable
  • 1 ½ cups halved cherry tomatoes
  • 2 tablespoons oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ cup finely shredded Parmesan cheese

Instructions

  • In a large bowl, combine 1 pound gnocchi, 1 ½ cups halved cherry tomatoes, 2 tablespoons oil, 1 teaspoon Italian seasoning, ½ teaspoon salt, ¼ teaspoon garlic powder, and ¼ teaspoon black pepper. Toss to coat.
  • Preheat the air fryer to 375 degrees Fahrenheit (190 degrees Celsius).
  • Add the seasoned gnocchi and tomatoes to the preheated air fryer. Shake the air fryer basket to settle everything in an even layer.
  • Air fry at 375 degrees Fahrenheit (190 degrees Celsius) for about 9-11 minutes, shaking the basket every 3 minutes, or until the gnocchi are soft and lightly crispy.
  • Sprinkle with ¼ cup finely shredded Parmesan cheese and air fry for another 2 minutes until melted.
  • Serve warm with fresh chopped parsley (optional) and enjoy.

  • Depending on the size of your air fryer, the gnocchi will get slightly crisp edges, but will stay mainly soft. If you want the gnocchi to be very crispy, cook them without the tomatoes.
