- Zucchini – Two firm, medium zucchini without soft spots.

- Cut the zucchini into similar-sized pieces; this helps with even cooking.
- Don’t cut the zucchini pieces too small or they will break apart during air frying; 1 inch is a good guideline.
- Don’t overcrowd the air fryer or the zucchini may not cook evenly. At the same time don’t overcook the zucchini, or it may get very soft.
- For a twist, you can change the seasoning (e.g. add smoked paprika or cayenne pepper) or toss the zucchini in breadcrumbs or grated Parmesan cheese.

Step by Step Instructions
First, rinse the zucchini and trim the ends. Next, cut them in half lengthwise, then quarter them lengthwise, and finally slice them into 1-inch pieces.
Add the zucchini pieces to a mixing bowl and also add the oil, Italian seasoning, garlic powder, salt and black pepper. Mix until the zucchini cubes are evenly coated.
Preheat the air fryer to 380 degrees Fahrenheit.
When it is hot, add the zucchini to the air fryer basket and give the basket a gentle shake to settle the pieces in one even layer.
Air fry the zucchini at 380 degrees Fahrenheit for 7-9 minutes or until tender and slightly browned. Shake the basket every 3 minutes to help with cooking time.

Storage Tips

Super good. I love the small chunks over the chips as it doesn’t take up as much space in my air fryer. I preferred smaller chunks and I cooked it longer so that they were more crispy and less squishy.
