Air Fryer Biscuit Breakfast Bites

These air fryer biscuit breakfast bites are a new favorite of ours for when we need a grab-and-go breakfast.

Made with canned biscuit dough, eggs, shredded cheese, and diced ham, they don’t take a lot of effort and are great for meal prep too.

You can also change up the add-ins to suit your taste. We like diced ham, but diced bell peppers or mushrooms are also great options!

To make these biscuit breakfast bites, you will need the following ingredients:

  • Canned biscuit dough – You’ll only need a few pieces.
  • Eggs – The main part of the filling.
  • Shredded cheese – We often use cheddar, but marble, Swiss, Monterey Jack, or similar also work well.
  • Ham – Use finely diced ham for the best distribution. For a vegetarian version, you can substitute diced bell peppers or mushrooms.
  • Milk – Adds a bit of creaminess to the egg mixture. Whole, 2%, or 1% milk all work.
  • Salt and pepper – To taste. You can also add garlic powder, onion powder, or a pinch of paprika for extra flavor.

Recipe Tips

  • Don’t overfill the cups. They might look underfilled, but the biscuit and egg expand significantly in the air fryer.
  • Don’t press the biscuit into the liners too hard, or it may not rise as much.
  • Use silicone liners; they help prevent sticking and make it easier to remove the bites after cooking.
  • You can customize the filling with finely chopped cooked bacon, cooked breakfast sausages, bell peppers, mushrooms, or cooked spinach.

Step-by-Step Instructions

First, whisk together the eggs, milk, salt, and pepper. Then stir in the cheese, ham, or other add-ins of your choice.

Separate the raw biscuits and cut them into quarters.

Gently press the biscuit pieces into the bottom of silicone muffin liners.

Then fill the liners with the egg mixture. The cups will look slightly underfilled, which is normal. The biscuits and egg will expand quite a lot during cooking.

Preheat your air fryer to 350 degrees Fahrenheit (175 degrees Celsius), then add the filled muffin liners to the air fryer basket. Cook in batches if needed.

Air fry at 350 degrees Fahrenheit (175 degrees Celsius) for 5-7 minutes, or until the eggs are set and the biscuits are puffed.

When they are done, carefully remove the breakfast bites from the air fryer and allow them to cool for a minute before removing them from the liner. Serve warm, with ketchup if you like (optional).

Storage Tips

Leftover breakfast bites, once cooled, can be stored in a sealed container or bag for up to 3-4 days.

To reheat them, we use the air fryer at a lower temperature, such as 300 degrees Fahrenheit (150 degrees Celsius) for a few minutes until the center is hot again. You can also use the microwave, but the bites may end up a bit softer.

We’ve also eaten them cold – they’re better hot, but if you’re on the go, eating them cold is definitely an option.

Ingredients

  • 3 large eggs
  • 1 tablespoon milk
  • salt and black pepper, to taste
  • 1/4 cup shredded cheese, marble, cheddar, etc.
  • 1/4 cup finely diced ham
  • 3 dough rounds, of canned biscuit dough

Instructions

  • In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in the shredded cheese, diced ham, or add-ins of your choice.

  • Separate the raw biscuits and cut each one into quarters. Gently press the biscuit pieces into the bottom of silicone muffin liners. Don't press too firmly.

  • Scoop about 1 tablespoon of the egg mixture into each biscuit-lined cup. Fill all the cups, then top up with any leftover mixture if needed. The cups will look slightly underfilled; this is normal.
  • Preheat your air fryer to 350 degrees Fahrenheit (175 degrees Celsius).
  • Carefully place the filled liners into the air fryer basket in a single layer. Cook in batches if needed.
  • Air fry the biscuit-egg bites at 350 degrees Fahrenheit (175 degrees Celsius) for 5-7 minutes, or until the eggs are set and the biscuits are fully cooked and puffed. The egg filling should reach an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius).
  • When done, carefully remove the breakfast bites from the air fryer and allow them to cool for a minute before removing them from the liner. Serve warm.
