This air fryer cheesy potato bake is creamy, loaded with cheese, and super easy to make. The top gets this crispy cheese crackle while the bottom stays nice and gooey.

We like it because it’s the perfect versatile comfort food. It can be a cheesy side dish for dinner or a great, filling addition to breakfast when served with eggs, bacon, and more!

To make this cheesy potato bake in the air fryer, here are the ingredients that you will need:

  • Frozen hashbrowns – We use diced hashbrowns, but shredded hashbrowns also work. Alternatively, use diced parboiled potatoes.
  • Heavy cream – Or whipping cream. For a lighter version, you can also use half-and-half.
  • Paprika – We use regular paprika, but if you like the flavor you can also use smoked paprika.
  • Garlic powder – Or granulated garlic. Adds extra flavor; adjust to taste.
  • Onion powder – For extra flavor.
  • Salt – Regular table salt; adjust to taste depending on the hashbrowns you’re using.
  • Black pepper – Add to taste.
  • Shredded cheese – We use cheddar and marble, but it’s also great with Swiss cheese (if you like the flavor).

Recipe Tips

  • If using frozen hashbrowns, allow them to thaw slightly. They can be cold (like fridge temperature) but not straight out of the freezer.
  • If using parboiled potatoes, cut them into 1/4-inch pieces and toss them in 2 teaspoons of melted butter or oil before adding the rest of the ingredients.
  • You can add things like cooked bacon, bits of ham, pre-cooked sausage, etc., but don’t overfill your dish and don’t add raw meat.
  • Check to make sure the potatoes at the bottom are cooked through before removing the dish from the air fryer.
  • We use a glass Pyrex dish, which is noted as safe for air frying. Check your dish before use. Your cook time can vary depending on the dish you use.

Step by Step Instructions

Allow the frozen diced hashbrowns to thaw slightly. Then add them to a bowl along with the cream, paprika, garlic powder, onion powder, salt, black pepper, and the majority of the cheese. Mix well.

Transfer the mixture to an oven-safe dish and spread it out evenly. Check to make that the dish fits into your air fryer first.

Top with the rest of the cheese.

Preheat the air fryer to 350 degrees Fahrenheit (175 degrees Celsius), then add the dish to the basket.

Air fry for 14-18 minutes, or until the potatoes are fully cooked and the cheese is melted and golden.

Allow to stand for a minute before serving. You can garnish it with some chopped parsley if you like. Enjoy!

Storage Tips

These cheesy potatoes are best served hot and fresh, but they also store and reheat pretty well. Place leftovers in a sealed container in the fridge and consume within 2 days.

You can reheat the potatoes in the air fryer at a lower temperature (such as 320 degrees Fahrenheit, 160 degrees Celsius) for a few minutes before serving again.

Ingredients

  • 1 pound diced hashbrowns, or parboiled potatoes cut into ¼-inch pieces
  • cup heavy cream
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder, more to taste
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt, more to taste
  • ¼ teaspoon black pepper
  • 1 ½ cup shredded cheese, cheddar, marble, or Swiss

Instructions

  • If using frozen hashbrowns, allow them to thaw slightly (fridge temperature is fine). This helps prevent the cream from freezing on contact.
  • In a large bowl, combine 1 pound diced hashbrowns, ⅔ cup heavy cream, ½ teaspoon paprika, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon salt, ¼ teaspoon black pepper, and about 1 cup of the shredded cheese.
  • Spread the mixture out evenly in an air fryer-safe dish. Sprinkle the remaining shredded cheese evenly over the top.
  • Preheat the air fryer to 350 degrees Fahrenheit (175 degrees Celsius). When hot, place the dish into the air fryer basket.
  • Air fry at 350 degrees Fahrenheit (175 degrees Celsius) for 14-18 minutes, or until the potatoes are fully cooked and heated through and the cheese on top is melted and golden.
  • Remove the dish from the air fryer and let it stand for 1-2 minutes before serving. You can garnish it with chopped parsley before serving, if desired.

Notes

  • Don’t use raw potatoes for this recipe. They will not cook through. You could dice some raw potatoes into 1/4-inch cubes, air fry them until almost cooked through, and then use them in the recipe above instead of the hashbrowns.
  • Instead of frozen diced hashbrowns, you can also use frozen shredded hashbrowns.
  • If using parboiled potatoes, cut them into 1/4-inch pieces and toss them in 2 teaspoons of melted butter or oil before adding the rest of the ingredients.
  • For a lighter version, use half-and-half or even milk. 
  • You can add cooked bacon pieces, bits of ham, or pre-cooked sausage, but don’t overfill your dish and don’t add raw meat.
  • Be sure to use an oven- and air-fryer-safe dish.
