Bread the fish.

Pour the panko breadcrumbs and all-purpose flour into two bowls. Add the salt to the flour bowl. Whisk the egg in a separate bowl.

Dip the fish strips first in the flour, then dip in the egg, then roll in the panko breadcrumbs. Be sure to coat the fish pieces evenly.
