Air Fryer Sausage Rolls (Homemade)

Homemade sausage rolls are the perfect combination of meaty, flaky pastry, and dippable goodness.

Made with just three ingredients – four if you count the optional sesame seeds – these sausage rolls are easy to make in the air fryer and make a great savory snack or quick meal.

We’ve both lived, worked, and studied in the UK on and off for many years – so we’re no stranger to a proper sausage roll (especially from Greggs!). Here’s our take on a British classic!

Ingredients

Here are the ingredients used to make these homemade sausage rolls in the air fryer:

  • Puff pastry – One sheet of puff pastry, about 10×10 inches. Thawed.
  • Sausages – You can use sausages of your choice. We use pork sausages (Bratwurst) in this case.
  • Egg – For the egg wash. Alternatively, you can also use milk.
  • Sesame Seeds – Optional garnish.

Recipe Tips

  • You can make your own dough, but store-bought puff pastry is quick and easy.
  • Ensure the puff pastry you use is fully thawed.
  • You can use any sausage you like (e.g. pork, chicken, beef, vegetarian). Keep in mind that the thickness of the sausage will affect the cooking time.
  • You can either remove the casing from the sausage or use ground sausage.
  • You can add ingredients for extra flavor, such as apple sauce for a hint of sweetness or mustard for a bit of tang.
  • You can cut the uncooked sausage rolls into smaller pieces if you prefer smaller sausage rolls. In this case, the cooking time may be slightly shorter.
  • Don’t overcrowd your air fryer so the sausage rolls can cook evenly. They will expand slightly during cooking.
  • Check the internal temperature to make sure the sausage is fully cooked. For pork sausage, the internal temperature should reach 165 degrees Fahrenheit.

Step by Step Instructions

First, remove the casings from the sausages using a knife or scissors. If you’re using ground sausage, this step isn’t necessary.

Unroll the puff pastry and cut it in half. Place two of the sausages near the edge of each piece of dough, about 1/3 of the way from one edge.

Roll the short edge of the puff pastry over the sausage to start covering it.

Continue rolling until the sausage is completely wrapped, leaving a small flap of dough exposed.

Now brush the flap with egg wash or milk, then roll to close. Then gently press down to help the dough stick together.

Next, cut the sausage rolls in half, creating four rolls, and use a sharp knife to cut slits into the tops of the puff pastry.

Then brush the tops and sides of the sausage rolls with egg wash or milk and sprinkle with sesame seeds (optional).

Preheat the air fryer to 370 degrees Fahrenheit. When hot, carefully place the sausage rolls into the air fryer basket. You can spray the basket with a little oil spray, but it’s not mandatory.

Cook the sausage rolls at 370 degrees Fahrenheit for 9-12 minutes until the puff pastry is golden brown and the sausage is cooked.

The pork sausage should be cooked to an internal temperature of 165 degrees Fahrenheit. The exact cooking time can vary depending on the sausage used and your air fryer.

When done, remove the sausage rolls from the air fryer and let them rest on a plate for a few minutes. Then serve them with mustard, ketchup or a dipping sauce of choice. Enjoy!

Storage Tips

Any leftover sausage rolls should be stored in the fridge in a sealed container (or wrapped in foil) for up to 3 days.

We recommend eating them sooner rather than later because the puff pastry will get more soggy over time.

They can be reheated in the microwave but we prefer the air fryer to bring back some of the crispiness.
