These air fryer chicken hand pies are one of those cozy comfort foods that feel and look more impressive than the effort it takes to make them!
You just need some frozen puff pastry, cooked chicken, frozen vegetables, and a few spices, and you can enjoy golden pockets of flaky goodness in under 25 minutes.
They’ve become one of our new go-to quick meals when we don’t feel like cooking, because they’re satisfying and perfect for using up leftover chicken in the fridge and frozen veggies in the freezer.
Ingredients
Here are the ingredients you’ll need to make these homemade chicken pot hand pies:
- Chicken broth – Use a low-sodium chicken broth if you want to better control the salt.
- Flour – Regular all-purpose flour to thicken the broth.
- Frozen mixed vegetables – We’re using a mix of frozen carrots and peas.
- Dried thyme – Adds a lot of delicious flavor to the hand pies, so don’t skip.
- Puff pastry – We use a frozen butter puff pastry sheet. You can also use puff pastry blocks, but they take longer to thaw and need to be rolled out.
- Egg – For the egg wash.
- Shredded chicken – Leftover shredded chicken breast works really well for this recipe. You can also use rotisserie chicken. Any chicken you use needs to be cooked.
- Garlic powder – For extra flavor; adjust to taste.
- Salt – Enhances the overall flavor. Adjust to taste depending on the chicken broth.
- Black pepper – For extra flavor. We use freshly cracked pepper.
Recipe Tips
- Use a good-quality butter puff pastry; it can make a difference in taste.
- We like to use butter puff pastry sheets that just need to be unfolded. You can use puff pastry blocks, but they need to be rolled out first.
- Work with puff pastry that is thawed but still cold. If it’s too warm, it can get sticky and harder to work with.
- If your chicken broth is very salty, reduce or omit the salt you add to the filling.
- Don’t overfill the pastry squares. Otherwise, they will be hard to close and might burst during cooking.
- We use egg wash to seal the pastries and give them their golden look. If you don’t want to use egg, milk also works.
- Avoid overcrowding the air fryer, so the hand pies can puff and brown properly.

Step-by-Step Instructions
First, whisk together the chicken broth, flour, and dried thyme. Then stir in the frozen peas and carrots.
Preheat the air fryer to 360 degrees Fahrenheit (180 degrees Celsius). Then pour the vegetable mixture into the air fryer basket (without tray) or an air fryer-safe dish.
Air fry for 3-4 minutes until the vegetables are soft and the liquid has thickened slightly.
Transfer the vegetables and thickened broth to a bowl and add the shredded chicken, garlic powder, salt, and black pepper.
Roll out the thawed puff pastry sheet to 10×10 inches (25×25 cm) and cut it into 4 squares.
Add filling to the center of each square, then brush the edges with egg wash and fold the pastry over the filling to close. Crimp the edges with a fork to seal.
Brush the tops with egg wash and cut small slits in the tops for steam to escape.
Wipe the air fryer basket clean, then preheat the air fryer to 350 degrees Fahrenheit (175 degrees Celsius).
Place the hand pies in the air fryer basket (with tray) in a single layer, leaving space between them.
Air fry at 350 degrees Fahrenheit (175 degrees Celsius) for 10-14 minutes, flipping halfway, or until golden brown and puffed.
You can brush the other side with egg wash after flipping if you like.
When they are done, remove the chicken pot hand pies from the air fryer.
Allow them to cool for a minute or two before serving (careful, hot).
Storage Tips
These hand pies are best enjoyed hot and fresh out of the air fryer. If you have leftovers, allow them to cool and then store them in an airtight container in the fridge for up to 2 days.
For reheating, we recommend the air fryer at a lower temperature, such as 300 degrees Fahrenheit, for 5-8 minutes, until the chicken-vegetable filling is hot again.
Be careful not to overcook or burn the pastry.

Ingredients
- 1/3 cup chicken broth
- 1 tablespoon flour
- 1/2 teaspoon dried thyme
- 2/3 cup frozen mixed peas and carrots
- 2/3 cup shredded chicken
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt, less if your chicken broth is very salty
- 1/4 teaspoon black pepper
- 1 sheet butter puff pastry, thawed
- 1 whisked egg, for egg wash
Instructions
- In a medium bowl, whisk together 1/3 cup chicken broth, 1 tablespoon flour, and 1/2 teaspoon dried thyme. Stir in 2/3 cup frozen mixed peas and carrots.
- Preheat the air fryer to 360 degrees Fahrenheit (180 degrees Celsius).
- Pour the vegetable mixture into the air fryer basket (with the tray removed) or into a small air fryer-safe dish. Air fry the mixture for 3-4 minutes until the vegetables are soft and the broth has slightly thickened. Alternatively, you can do this step in a small saucepan on the stove.
- Transfer the vegetables and all of the thickened liquid from the air fryer to a bowl. Stir in 2/3 cup shredded chicken, 1/2 teaspoon garlic powder, 1/4 teaspoon salt (or less if your chicken broth is very salty), and 1/4 teaspoon black pepper.
- Unfold 1 sheet butter puff pastry (thawed) and roll it out gently into a 10×10 inch (25×25 cm) square. Cut it into 4 equal squares and spoon about 1/3 cup of filling into the center of each square.
- Brush the edges of each square with egg wash. Then fold the pastry over the filling to form either a rectangle or a triangle. Press the edges together and crimp with a fork to seal.
- Brush the tops with egg wash and cut small slits into the tops to allow steam to escape.
- Wipe the air fryer basket clean, then preheat the air fryer to 350 degrees Fahrenheit (175 degrees Celsius).
- Place the hand pies in the air fryer basket in a single layer, leaving space between them (they will expand during cooking). Air fry in batches if needed.
- Air fry at 350 degrees Fahrenheit (175 degrees Celsius) for 10-14 minutes, flipping halfway, or until golden brown and puffed. You can brush the other side with egg wash after flipping (optional).
