These air fryer turkey, apple, and cheddar roll-ups will make you look forward to the end of Thanksgiving!

This recipe was designed with Thanksgiving leftovers in mind and creates the best melty roll-ups packed with only four ingredients: apple, cheddar cheese, mustard, and turkey.

They’re so easy to make and very tasty – perfect for using up leftovers and not letting any delicious turkey go to waste!

Ingredients

  • Turkey – We use pre-cooked turkey breast for this, but light or dark meat would work. Deli turkey slices also work if you have any on hand.
  • Dijon mustard – For a bit of tang. You can also use a Honey Dijon mustard for a little sweetness.
  • Apple – We recommend a tart apple like Granny Smith, but any firm apple works.
  • Cheddar Cheese – Shredded. You can use other cheese, but we find a sharp orange cheddar works well.
  • Tortilla – We used Ancient Grain tortillas, but white or whole wheat work well, too. We’d stay away from flavors like sundried tomato tortillas for this recipe.
  • Oil Spray – To spray the tops of the tortilla in the air fryer. This is optional.

Recipe Tips

  • Try to layer and spread out the ingredients evenly. This will help with easy rolling later.
  • Pull the turkey very small or slice it quite thin to help with even rolling.
  • You can add salt and pepper to the mix, but we find that it’s not necessary.
  • Once you’ve sliced the apples, use them immediately to prevent browning.
  • Keep an eye on the roll-ups since they can go from crispy to burnt quite quickly.

Step-by-Step Instructions

First, preheat the air fryer to 380 degrees Fahrenheit (190 degrees Celsius).

In the meantime, spread Dijon mustard evenly over the tortilla, then layer the apple slices on top.

Now layer the turkey evenly over the apples and finally sprinkle with shredded cheese.

Roll the tortilla up tightly and place it with the seam side down on a cutting board. Cut into into three evenly sized pieces.

Place the rolls into the preheated air fryer and spray with oil spray.

Then air fry at 380 degrees Fahrenheit (190 degrees Celsius) for 3-5 minutes, or until roll ups are crispy and the cheese is melted.

Allow the turkey roll-ups to cool for a minute, then serve as is, with cranberry sauce or a dipping sauce of your choice. Enjoy!

Storage Tips

These turkey-apple-cheddar roll-ups taste best when they are freshly made.

If you do have any leftover, place them in foil or in a sealed container and store them in the fridge for 1-2 days. The tortilla will lose its crisp over time.

You can reheat the roll-ups in the air fryer for a few minutes, but keep an eye on them since you don’t want them to get burned.

Ingredients

  • 1 flour tortilla, white, whole wheat or ancient grain
  • 1 tablespoon Dijon mustard, or Honey Dijon
  • 1.5 ounces green apple, thinly sliced (about 1/3 of an apple)
  • 3/4 cup cooked turkey, shredded or thinly sliced
  • 1/2 cup cheddar cheese, shredded
  • oil spray, optional

Instructions

  • Preheat the air fryer to 380 degrees Fahrenheit (190 degrees Celsius).
  • Meanwhile, lay the tortilla flat on a plate or cutting board. Spread the Dijon mustard evenly over the surface, all the way to the edges.

  • Layer the apple slices evenly on top of the tortilla.
    1.5 ounces green apple
  • Layer the turkey evenly over the apples.
    3/4 cup cooked turkey
  • Sprinkle the cheddar cheese over the turkey.

  • Starting from one side, roll the tortilla tightly, placing the seam side down. Use a sharp knife to cut the roll into three equal pieces.
  • Place the pieces in the preheated air fryer basket, seam side down. Leave space between them. Lightly spray the tops with oil (optional).

  • Air fry the turkey roll-ups at 380 degrees Fahrenheit (190 degrees Celsius) for 3-6 minutes, or until the tops are crispy, the inside is hot, and the cheese is melted.
  • When done, remove the rolls from the air fryer and allow them to cool for a minute or two. Serve them as is, with cranberry sauce, or a dipping sauce of your choice.

  • If you have the room, you can cook more than one roll-up in the air fryer at once. There should be some space between the rolls so they can crisp evenly.
