Wash potatoes thoroughly and pat them dry. Using a sharp knife, make cuts in the top of each potato – but don’t cut all the way through!
The distance between the cuts should be about 2 mm. If you can’t cut that thin, that’s fine too.

In a small bowl, mix together the salt, granulated garlic, paprika, dried herb seasoning, coriander, oil, and minced garlic.

Grease each potato with the oil and spice mixture. Try to get the oil between the cuts as well.

Place the potatoes in the air fryer basket. Be sure to leave some space between them so that they can cook evenly. There is no need to preheat the air fryer first.
Cook them at 390 degrees Fahrenheit for 15 minutes.

After 15 minutes, the potatoes will be cooked on top, but the bottom half will still be raw.

Flip the potatoes to the other side and cook for another 15 minutes or until the potatoes are fully cooked.
Check to make sure that the potatoes are fully cooked through by inserting a fork into the potatoes. If it goes through easily, the potatoes are done.
Keep in mind that the exact cooking time may vary depending on your air fryer and the size of the potatoes.

You can also sprinkle some shredded cheese on top and air fry the hasselback potatoes for another minute or two until the cheese is melted (optional).

When the hasselback potatoes are done, remove them from the air fryer and garnish with chopped parsley. Enjoy!
Storage Tips
These Hasselback potatoes store well once cooked. Allow them to cool, then store them in a sealed container in the fridge.
They will keep for 3-4 days, but the earlier you eat them the better, as they tend to lose their crispy exterior in the fridge.
You can easily reheat the hasselback potatoes in the air fryer. This should revive some of the crispiness of the potato and heat them through effectively.
What to Serve Hasselback Potatoes With
These tasty potatoes go well with lots of different meat and vegetable combinations:
