Ingredients
Here are the ingredients you will need to make these root vegetables in the air fryer:
- Root vegetables – A mix of carrots, turnips, parsnips, rutabaga, and/or beets.
- Oil – We use avocado oil, but you can also use canola, sunflower, or olive oil.
- Balsamic vinegar – You can adjust the amount to taste, but please don’t skip it.
- Maple syrup – Use real maple syrup if possible.
- Rosemary – Dried rosemary works well. Alternatively, thyme or a herb blend also work.
- Salt – Regular table salt; adjust to taste.
- Black pepper – We like to use freshly ground black pepper.
Recipe Tips
- We like using carrots, parsnips, and turnips, but rutabaga, radishes, and beets are also fair game! Use whatever you have on hand.
- Whatever vegetables you choose, try to cut the pieces into roughly the same size. This helps with even cooking and crisping.
- Add a little more or less maple syrup depending on how sweet and caramelized you like your vegetables.
- You can add a dash of cayenne pepper or sriracha for a hint of spice.
- Don’t overcrowd the air fryer basket so the vegetables cook evenly. Cook in batches if needed.

Step-by-Step Instructions
First, trim the ends, then peel or rinse the root vegetables.
Next, cut carrots and parsnips in half lengthwise if they’re on the thicker side. Then slice into 1-inch long pieces. Cut turnips, beets, or rutabaga into roughly 1-inch thick pieces as well.
Add the chopped vegetables to a mixing bowl along with the oil, maple syrup, balsamic vinegar, rosemary, salt, and pepper. Toss to coat.
Preheat the air fryer to 380 degrees Fahrenheit (190 degrees Celsius). Then add the vegetables in one even layer.
Cook for about 12-16 minutes total, or until tender and slightly crispy on the outside. Shake the air fryer basket every 4 minutes. The exact cooking time can vary.
Remove from the air fryer and serve as a side dish. It’s very versatile and goes well with different roasts, fish dishes, and more. Enjoy!
Storage Tips
Store any leftovers in a sealed container in the fridge. They will last for up to 3 days, but for optimal taste and freshness, they should be eaten the next day.

Ingredients
- 1.5 pounds root vegetables, (carrots, turnips, parsnips, beets, rainbow carrots, rutabaga)
- 2 teaspoons oil
- 2 teaspoons maple syrup
- 1 ½ teaspoons balsamic vinegar
- 1 teaspoon dried rosemary
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Cut the ends off 1.5 pounds root vegetables. Peel them or rinse them well.
- Cut the carrots and parsnips in half lengthwise (leave them whole if they're thinner), then slice into 1-inch long pieces. Cut turnips, beets, and rutabaga into roughly 1-inch thick pieces.
- Place all cut vegetables in a mixing bowl. Add 2 teaspoons oil, 2 teaspoons maple syrup, 1 ½ teaspoons balsamic vinegar, 1 teaspoon dried rosemary, ¼ teaspoon salt, and ¼ teaspoon black pepper. Toss until evenly coated.
- Preheat your air fryer to 380 degrees Fahrenheit (190 degrees Celsius).
- When the air fryer is hot, add the vegetables and gently shake the air fryer basket to settle them into an even layer.
- Cook the root vegetable 380 degrees Fahrenheit (190 degrees Celsius) for 12-16 minutes total, or until tender and slightly roasted on the outside. Shake the air fryer basket approximately every 4 minutes to help with even cooking. Every air fryer is slightly different, so your exact cooking time might vary.
- When they are done, remove the root vegetables from the air fryer and place them in a serving bowl. Serve them as a side dish.
