This air fryer winter vegetable medley is the perfect seasonal side dish.
Made with potatoes, carrots, beets, Brussels sprouts, and a few fragrant herbs like rosemary, thyme, and sage, it’s a versatile accompaniment to many mains.
We love this recipe because it’s easy to customize to suit your taste and what vegetables are available near you at any point in the winter season.
Ingredients
- Potatoes – We use yellow potatoes, but all-purpose potatoes also work.
- Carrot – Adds natural sweetness and color to the medley, so we recommend adding one.
- Beetroot – Brings earthy flavor and a pop of color, but they need a little extra cook time.
- Brussels sprouts – Choose Brussels sprouts that are firm with tightly packed leaves.
- Oil – We use avocado oil, but you can also use canola oil, vegetable oil, or similar.
- Dried rosemary – Works really well with winter vegetables, so don’t skip it if possible.
- Dried thyme – Adds extra flavor without being too much.
- Dried sage – Optional, but adds earthy flavor. It can be overpowering, so don’t add too much.
- Salt – Enhances the flavor; adjust to taste.
- Black pepper – Add to taste. Use freshly ground pepper for the best taste.

Step-by-Step Instructions
Peel the carrots and beets and trim the ends. Cut off any excess stem of the Brussels sprouts, then cut them in half.
Next, cut the potatoes and carrots into 3/4 inch pieces. Cut the beet into slightly smaller pieces.
Place the beets in a small bowl and the carrots, potatoes, and Brussels Sprouts in a larger one.
Add the oil, herbs, salt, and pepper to the large bowl and toss until the vegetables are evenly coated.
Preheat the air fryer to 375°F (190°C). Once it’s hot, add the beets and cook for 4-5 minutes.
Then add the rest of the seasoned vegetables and give the basket a shake to mix with the beets.
Continue air frying for 14-18 minutes, or until the vegetables are fork-tender and lightly crispy. Shake the basket every 4 minutes for even cooking.
When they’re done, transfer them to a serving bowl and enjoy as a colorful side dish!
Recipe Tips
- Cut the vegetables to roughly the same size, except the beets – cut them smaller since they usually take slightly longer to cook.
- Rosemary and thyme are classic herbs, but you can also make this recipe with oregano or an herb mix.
- For some extra sweetness, you can add a small drizzle of maple syrup before cooking.
- Watch the Brussels sprouts as their outer leaves can become a little extra crispy. We like the taste, but you can remove the dark outer leaves before serving if you prefer.
Storage Tips
If you have leftovers, store them in a sealed container in the fridge for up to 3 days.
You can reheat them for a few minutes in the air fryer, but try not to overcook them.

- 6 ounces brussels sprouts, about 8-9 brussels sprouts
- 1 tablespoon oil

- To the bowl with the potatoes, carrots, and Brussels sprouts, add the oil, dried rosemary, dried thyme, ground sage (optional), salt, and pepper. - Preheat the air fryer to 375 degrees Fahrenheit (190 degrees Celsius). When hot, add only the beets to the air fryer basket and air fry for 4-5 minutes to give them a head start.
- Add the seasoned potatoes, carrots, and Brussels sprouts to the air fryer basket and give the basket a shake to mix everything together.
- Continue air frying at 375 degrees Fahrenheit (190 degrees Celsius) for 14-18 minutes, or until all the vegetables are fork-tender and lightly browned. Shake the basket every 4 minutes to help with even cooking and crisping.
- When they're done, transfer the vegetables to a serving dish and serve warm.

Notes
- Use approximately 1.5 pounds of winter vegetables total. You can also add or substitute sweet potato or parsnip.
- Cut the potatoes and carrots (and parsnips if using) to the same size, but cut the beets slightly smaller.
- Rosemary and Thyme work really well for this recipe, but you can also try it with oregano or an herb mix.
- You can add a small drizzle of maple syrup (when you add the oil) for extra sweetness.
- If the Brussels sprouts are too dark for your liking, you can remove the dark outer leaves before serving.
