If you haven’t done so already, start by washing and drying the vegetables. Chop the shallots, zucchini, and bell peppers. Then place all the vegetables in a bowl.

At this time, also preheat the air fryer to 380 degrees Fahrenheit for about 5 minutes or until it indicates that it is preheated.

To the bowl with the vegetables, add the olive oil, salt, paprika, and granulated garlic. Mix thoroughly.

Storage Tips

These vegetable skewers taste best when they are fresh, but you can store leftovers in a sealed container or wrapped in foil once they have cooled completely.

You can also remove the vegetables from the skewers first to prevent them from becoming soft.

They will keep for 2-3 days, but the veggies do tend to get soft over time, so it’s best to eat them sooner rather than later!
