If you are looking for a delicious twist on your regular chicken breast recipe, try making air fryer stuffed chicken breast with spinach.

It is easy to make and uses only a few ingredients, but the result is tender and moist chicken with a creamy and cheesy spinach filling.

You can serve this chicken dish with any side you like, such as rice, potatoes, vegetables, and/or a salad, for a meal worth sharing with others.

Ingredients

To make these stuffed chicken breasts, here are the ingredients you will need:

  • Chicken breasts – Use chicken breasts that are roughly the same size for even cooking.
  • Spinach – Fresh spinach for the filling. You can use frozen spinach as well, but thaw it first.
  • Cream cheese – Adds creaminess and helps bind the filling. Can be flavored cream cheese if you prefer.
  • Feta cheese – Or use shredded mozzarella instead.
  • Oil – Some for the filling and some for brushing the outside of the chicken. We like to use avocado oil.
  • Salt – Enhances the overall flavor.
  • Granulated garlic – Or garlic powder; for extra flavor. Adjust the amount to taste
  • Paprika – Adds extra flavor and color to the chicken breasts.
  • Black pepper – Adds a hint of spice.
  • Coriander – Optional; adds a subtle earthy flavor.

Recipe Tips

  • The chicken breasts should all be about the same size so they cook evenly.
  • Don’t cut the chicken breasts all the way through. Otherwise, it’ll be difficult to add the filling.
  • Be sure to drain the spinach and squeeze out excess water.
  • Adjust the amount of salt you add depending on the saltiness of the filling.
  • It’s important not to overfill the breasts, or too much of the filling may spill out during cooking.
  • You can secure the chicken breasts with toothpicks or kitchen twine to hold the filling in place.
  • Place the chicken breasts into the air fryer in a single layer without overlapping so they cook evenly.

Step-by-Step Instructions

First, blanch the spinach in a pot of boiling water. Then, squeeze out any excess moisture and chop it.

In a small bowl, combine the ingredients for the filling.

Next, cut a pocket in each chicken breast, being careful not to cut all the way through. Then spoon the filling evenly into the pockets and close them with toothpicks.

In a small bowl, combine the oil, paprika, salt, and black pepper. Then evenly brush the outside of the chicken breasts with the mixture.

Preheat the air fryer to 375 degrees Fahrenheit (190 degrees Celcius). When it’s hot, place the stuffed chicken breasts in the air fryer in one even layer.

Air fry for 10-12 minutes, then flip, and cook for another 10-12 minutes or until the chicken is cooked through and the filling is bubbly.

The chicken should reach an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius). The exact cooking time can vary.

When it’s done, remove the chicken from the air fryer and allow it to rest for a couple of minutes. Then serve the chicken breasts whole or sliced with side dishes of your choice. Enjoy!

Storage Tips

If you have leftover chicken, allow it to cool, then store it in a sealed container in the fridge. The chicken will last in the fridge for up to 3 days, but we recommend eating it sooner rather than later.

You can choose to reheat it in the air fryer or the microwave – it kind of depends on whether the leftovers are cut into pieces or were left whole when served.

Whole stuffed chicken breasts work better in the air fryer, whereas cut pieces work better in the microwave. The microwave can make chicken rubbery, though, so keep an eye on it.

What to Serve These Chicken Breasts With

There are loads of great sides you can serve with this chicken breast recipe.

  • Potatoes: We like fingerling potatoes or baby potatoes, but you can also make Hasselback potatoes, scalloped potatoes, mashed potatoes, or French fries.
  • Rice: If you’re not a fan of potatoes, you can make some rice. Wild rice is great with spinach and cheese-stuffed chicken breasts, or you could try Greek rice.
  • Vegetables: There are lots of different vegetables you can serve with the chicken, such as air fried broccoli, green beans, or even air fryer bacon-wrapped asparagus. Of course, steamed or oven-roasted vegetables are also an option.
  • Salad: A leafy green salad, Greek salad, or potato or pasta salad all work well.

Ingredients

  • 2 chicken breasts
  • 1 cup spinach, finely chopped
  • 2 tablespoons feta cheese, crumbled; or shredded mozzarella
  • 1 ½ tablespoons cream cheese
  • 1 tablespoon oil
  • ½ teaspoon granulated garlic
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon coriander, ground (optional)

For The Wet Rub

  • 1 tablespoon oil
  • 1 teaspoon paprika
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon black pepper

Instructions

  • Blanch the chopped spinach in a pot of boiling water for about 1 minute. Then remove the spinach and squeeze out any excess moisture.
