First, preheat the air fryer to 370 degrees Fahrenheit for about 5 minutes or until it indicates that it is preheated.
Meanwhile, blanch the chopped spinach in a pot of boiling water for about 1 minute. Then remove the spinach and squeeze out any excess moisture.
In a bowl, combine the spinach, feta cheese, cream cheese, granulated garlic, black pepper, and ground coriander (optional). Mix well to make a smooth filling.
Cut a pocket in each chicken breast, being careful not to cut all the way through. Season the inside of the pockets with salt (optional – skip if the filling is already very salty).
Spoon the filling evenly into the pockets and close them with the top part of the chicken. You can use wooden toothpicks to secure them if needed.
