Step-by-Step Instructions
First, blanch the spinach in a pot of boiling water. Then, squeeze out any excess moisture and chop it.
In a small bowl, combine the ingredients for the filling.
Next, cut a pocket in each chicken breast, being careful not to cut all the way through. Then spoon the filling evenly into the pockets and close them with toothpicks.
In a small bowl, combine the oil, paprika, salt, and black pepper. Then evenly brush the outside of the chicken breasts with the mixture.
Preheat the air fryer to 375 degrees Fahrenheit (190 degrees Celcius). When it’s hot, place the stuffed chicken breasts in the air fryer in one even layer.
Air fry for 10-12 minutes, then flip, and cook for another 10-12 minutes or until the chicken is cooked through and the filling is bubbly.
The chicken should reach an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius). The exact cooking time can vary.
When it’s done, remove the chicken from the air fryer and allow it to rest for a couple of minutes. Then serve the chicken breasts whole or sliced with side dishes of your choice. Enjoy!
Storage Tips
If you have leftover chicken, allow it to cool, then store it in a sealed container in the fridge. The chicken will last in the fridge for up to 3 days, but we recommend eating it sooner rather than later.
You can choose to reheat it in the air fryer or the microwave – it kind of depends on whether the leftovers are cut into pieces or were left whole when served.
Whole stuffed chicken breasts work better in the air fryer, whereas cut pieces work better in the microwave. The microwave can make chicken rubbery, though, so keep an eye on it.
